Fried Chicken

Man was I amped to try out my new fried chicken recipe.  I can’t think of anything more tasty than some fresh, hot and juicy fried chicken.  It’s about as American as it gets.  This was my first go ’round with legitimate fried chicken.  So ya take the whole flour seasoning mixture and put it together, beat an egg and heat up a “healthy” amount of canola oil.  Rub the seasoning all over the chicken with the egg and milk mixture, toss it in the oil for some time and you have fried chicken.  Sounds great…………..not quite! 

 I look at this meal like I look at sports.  It’s a great comparison, especially today.  So I get my weekly Sports Illustrated every Thursday.  This week featured the baseball preview.  I love this one, especially when the Cubs are supposed to be good.  I get all amped up to read about how SI thinks about my Cubbies.  Well, as usual, they predict the Cubs to make it far in the playoffs.  In fact, they went as far as saying they would lose in the World Series.  Wow, you mean to tell me the Cubs are that good?  Dream on, this is the same magazine that 2 years ago said the Dolphins and Cowboys would meet in the Super Bowl.  We all know that was a huge mistake.  The ’Phins finished at the bottom of the AFC and the ‘Boys QB was just falling head over heels for Nick Lachey’s old Barbie doll.  What I’m saying here folks is that you can’t judge a book by it’s cover.  You can’t crown a champion based purely on looks.  No one ever won a title because they looked good on paper, damnit!  What I’m trying to say is this chicken looked amazing.  I was all excited to share my new recipe with the world.  I was ready to enter this recipe into the fried chicken championship and have some guy in a white suit, weird looking hat and wire rim glasses tell me I just won the Kewaunee County title.  It was a done deal………until I put the chicken up to my rather large lips and took a bite.  The band stopped playing, the balloons were falling from the sky and I was forced to face the harsh reality I didn’t have the perfect recipe for fried chicken.  I was heart broken, not because of the high cholesterol but because it tasted like motor oil.  I mean, how could something so beautiful taste to awful.  If I was trying out for Hell’s Kitchen, Gordon Ramsey would have punched me and shoved me face first into the nearest garbage disposal.  I just don’t know what to do with myself at this point.  This loss is going to take minutes to overcome.  I beg you, that’s if anyone besides my Mom reads this, to send me your fried chicken recipes.  I long for some crispy fried chicken.  HELP!

    First of all, marinate chicken pieces in buttermilk, salt, pepper, and some cayanne,(for about 20 mins. up to an hour.) Next, heat up oil to about 360 degrees. While heating up the oil, put flour and spices (salt and pepper, garlic and onion powders, paprika, and cayanne pepper)into a large bowl or zip loc baggy.
    Take chicken from buttermilk and place in flour (you got two choices now, You can either take well coated chicken to the oil, or go back to the buttermilk then flour again. This is called the “cosatnza”, because it’s double dipped. Place chicken in the oil and let cook until golden brown and not raw. If you over crowd the oil with the chicken, the temp will drop and the chicken will start to absorb the oil, which sucks.

    I think you may have solved my problem. I think the oil temp dropped too much while cooking, thus causing the oil to absorb. I had to deviate slightly from the recipe due to not having buttermilk. I found an alternate recipe that did not call for buttermilk. ‘Mos Jef’, you’ve given me life in my quest for the ultimate fried chicken. Thanks!

    Hey “Normy” a name I did not know you by until this afternoon! Fried chicken! Start with boneless skinless strips! not thin. beat 1 egg and enough water to soak the chicken. Use 1/2 cup flour, 1/2 cup yellow corn meal, 2 tbls paprika, 2 tsp salt, 1/2 tsp celery salt, 1/4 tsp pepper. Mix this in paper bag. Place a few pieces of chicken in paper bag, shake then place in hot oil in skillet. Fry until crispy.

    boo to the cardinals. they’re the odds on favorite to finish last in the division…..5 spots behind the 1st place cubs! ha ha.
